What is Sustainable Gastronomy?

Gastronomy is sometimes called the art of food. It can also refer to a style of cooking from a particular region. In other words, gastronomy often refers to local food and cuisine. Sustainability is the idea that something (e.g. agriculture, fishing or even preparation of food) is done in a way that is not wasteful of our natural resources and can be continued into the future without being detrimental to our environment or health.

Sustainable gastronomy, therefore, means cuisine that takes into account where the ingredients are from, how the food is grown and how it gets to our markets and eventually to our plates.

For sustainability shapers and leaders

Transnational community is becoming more and more important as the world gets smaller with technological advances. In order to create unique and different events, we invite organisations in all sector – public, private, educational or NGO, to put your own flavour in the development mix. Connect with a community of peers and turn words into actions to shape sustainable food systems. Here we’re opening the doors for any Baltic food and sustainability related topic you would like your organisation to address through an event, talk, hackathon and so on.
If you do not have the right idea, but are passionate about food and want to contribute, we are happy to help you match with the right partner and to help with inspiration.

There’s something for everyone’s taste buds. Here we set the stage for various activities, with a focus on sustainability, to delight all your senses while increasing your food literacy, no matter what age you are. By being open to locally grown foods, eating what is in season, trying types of fish you have never heard of or fruits that you have never seen before, eating local products helps to give you a better insight into the Baltic culture of a place and supports local economies.

The program consists of dining experiences, tastings, workshops, talks and much, much more.
